What can I do with really ripe bananas?

  •  If you don’t plan to use them immediately, freeze them! Peel the bananas, break them into the size pieces you’d like and space them out on a sheet tray. Place the tray in the freezer until pieces are frozen solid. Transfer frozen banana pieces into an airtight container or bag for longer term storage.

  • Use ripe banana in sweet breads (you can either keep it simple or add oats) and as an egg replacement when baking (one mashed banana will replace one egg). You can add these banana pieces into smoothies or cook them into your morning oatmeal for natural sweetness, potassium and fiber.

  • Make frozen banana treats—slice banana into coin shapes. Smear peanut butter on one slice and sandwich with another banana slice. Freeze this and dip in chocolate if you’d like! This makes for a delicious instant frozen treat when you’re wanting a sweet and salty snack.

  • Make crispy baked banana chips! Baking dries out the banana, which extends their shelf life and is a delicious sweet snack. Slice fresh bananas into even size pieces and arrange in a single layer on a lightly greased or parchment lined baking sheet. Brush with lemon juice. Bake for 2 hours at 200F, flipping halfway through. Bake longer if still gooey. Remove from the oven and cool completely. Store in an airtight container.
